A Portuguese Feast

Saturday I finally used my landlady's brick grill she told me I could use to grill sardines. Well, not really me (my BF!), but I made the side dishes. The food... plus the company... made it a REAL feast!





These sardines were almost too cute to eat... almost. ;)

We had soup, sardines, boiled potatoes, beans, tomato and bell pepper salad, olives and lemonade. Here are the recipes if you want to make your own Portuguese feast.

Rinse the sardines and salt them with coarse salt on both sides. Let them sit in the refrigerator for about an hour. Grill on each side for about five minutes, until the eyes are opaque. To make a vinegar sauce to pour on sardines: mix 1/2 cup olive oil, 1 small chopped onion, 6 chopped garlic cloves, 1 bay leaf, plenty chopped parsley, 1 tablespoon paprika, 1/2 red wine vinegar, salt and pepper.

To make beans, boil three eggs. Rinse two large cans of black-eyed beans and add 1/2 chopped onion, 1/2 cup olive oil, 3 tablespoons red wine vinegar, plenty chopped parsley and a pinch of salt. Garnish with hardboiled eggs.




Caldo verde soup: In a large pot, sautee 2 coarsely chopped onions in a few tablespoons of oil olive until translucent. Add 4 garlic cloves and 1/8 teaspoon red pepper flakes and sautee for 1 minute. Add six cups water and bring to a boil. Add 5 large potatoes and boil for ten minutes, or until tender. Puree the soup and add 200g chiffonnaded kale and boil for another five minutes. Optional: add sausage or veggie sausage. ;)


Lemonade: Juice three or four lemons, add sugar and water slowly until you reach your desired lemonade taste!
