Isolation Opportunity for Creating a Richer Family Culture Idea #6: Chocolate Chip Muffins

This is a recipe I use for breakfast when I don't have bread and not much time but want something special. You don't have to flip them like pancakes: you pour the batter in the muffin tins and can do something else. Everyone likes them, including me. Once I didn't have eggs and substituted bananas and they still turned out nice. Enjoy!

1/2 cup butter, softened
3/4 cup sugar
2 eggs
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
2 cups flour
1/2 cup milk 
1 cup chocolate chips
(Or, if you live in Portugal and are sadly deprived of cheap, readily-available chocolate chips, 100g dark chocolate bar chopped up.)

Mix in each ingredient one by one with electric blender. If too solid, add more milk. Pour in muffin tins with liners (makes 12). 

7 minutes at 220°C / 400°F
15 minutes more at 180°C / 350°F
